This brand new, upscale 76-seater bar at Neil Road is an exercise in cosmopolitanism. Inspired by owner Pierre-Emmanuel Plassart’s travels, the bar’s decor is best described as Parisian chic (every single piece of furniture was custom-made in France), coupled with Asian accents, such as Chinese lanterns. The food menu also runs the gamut, from dishes like the slow cooked beef cheek ($12), served with truffle jus, celeriac, carrots and potato mousse, to a frittata ($9) that contains caramelised onion, confit potato and pickled red peppers.

Drinks-wise, expect mostly premium tipples of the top-shelf variety, with hefty price tags to match. Some of the rare sprits offerings include the Benriach 21yr 1988 Official Single Cask for Singapore and the Glendronach 22yr 1990 Silver Seal Single Cask. There’s also a range of signature cocktails, crafted by mixologist Louis Tan—for example the Sloe Comfortable Wallbanger, comprising of sloe gin, whisky peach liqueur, orange syrup, lemon, egg white and soda. The disparate influences behind this bar may come across as schizophrenic to some, but we think that L’Aiglon may just be able to pull it off with finesse.
